Wimbledon Cheats Jam Tarts

So who doesn’t like a jam tart! It’s always great to make anything you can yourself but lets be honest some short cuts are just necessary. Making pastry is a nightmare sometimes and there is nothing wrong buying it ready made.

These jam tarts are super easy to make. When buying the ready made pastry, buy ready rolled rather than a block of pastry. I tried using a block of pastry first time round and although they came out fine, you get a more polished finish using ready rolled. The pastry needs to be thinly rolled so ready rolled takes all that hassle away of getting it thin enough and even.

Ingredients

  • Strawberry Jam
  • Ready roll short crust pastry
  • Fresh strawberries

 

Method

Pre-heat the oven to Gas mark 6, I’ve taken this from the cooking instructions on the pastry so its best to check according to the pastry you’ve purchased.

Lay out the ready roll pastry and cut out 12 discs of pastry. I used a crinkle cutter 3 inches wide.

Grease a 12 hole bun tin with a little butter and place the pastry discs into each hole. Pressing down gently to the shape of the tin, being careful not to lose the crinkle edge.

Place a spoonful of jam into each pastry tart. Make sure you don’t over fill each tart as the jam will melt and bubble when in the oven.

Place in the middle of the oven for about 10 minutes or until the pastry is cooked and the jam has evenly spread inside the tart.

Slice enough strawberries to decorate each tart. Once the tarts are cooled place a strawberry slice onto each one and voila!
